  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 8 ounces fettuccine or pasta of your choice

Instructions

  1. Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
  2. Add the fettuccine (or chosen pasta) and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
  3. Reserve about 1 cup of pasta water, then drain the rest. Set the pasta aside in a large bowl, drizzling a little olive oil over it to prevent sticking.
  4. Pat the shrimp dry with paper towels and season with salt, pepper, and paprika.
  5. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  6. Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
  7. In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
  8. Pour in chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer.
  9. Slowly pour in heavy cream while stirring.
  10. Add Italian seasoning, salt, and pepper. Let simmer for about 5 minutes to thicken.
  11. Stir in grated Parmesan cheese until melted and combined.
  12. Add cooked shrimp back into the skillet, stirring to coat with sauce. Simmer for an additional 2-3 minutes.
  13. Add cooked pasta to the skillet, tossing to coat. Add reserved pasta water if needed for consistency.
  14. Adjust seasoning as necessary.
  15. Use tongs to twirl pasta onto plates.
  16. Sprinkle with chopped parsley and extra Parmesan if desired.
  17. Serve immediately with garlic bread or a fresh green salad.
