- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
- 8 ounces fettuccine or pasta of your choice
Instructions
- Fill a large pot with water and bring it to a rolling boil over high heat. Add a generous pinch of salt.
- Add the fettuccine (or chosen pasta) and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally.
- Reserve about 1 cup of pasta water, then drain the rest. Set the pasta aside in a large bowl, drizzling a little olive oil over it to prevent sticking.
- Pat the shrimp dry with paper towels and season with salt, pepper, and paprika.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp in a single layer and cook for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant.
- Pour in chicken broth, scraping the bottom of the skillet to deglaze. Bring to a simmer.
- Slowly pour in heavy cream while stirring.
- Add Italian seasoning, salt, and pepper. Let simmer for about 5 minutes to thicken.
- Stir in grated Parmesan cheese until melted and combined.
- Add cooked shrimp back into the skillet, stirring to coat with sauce. Simmer for an additional 2-3 minutes.
- Add cooked pasta to the skillet, tossing to coat. Add reserved pasta water if needed for consistency.
- Adjust seasoning as necessary.
- Use tongs to twirl pasta onto plates.
- Sprinkle with chopped parsley and extra Parmesan if desired.
- Serve immediately with garlic bread or a fresh green salad.
