Ingredients
Scale
- 1 pound of boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 ounces fettuccine pasta
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
- Cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C).
- Remove the chicken from the skillet and let it rest for 5 minutes before slicing into strips or bite-sized pieces.
- Bring salted water to a boil in a large pot.
- Add fettuccine pasta and cook according to package instructions (8-10 minutes) until al dente. Stir occasionally.
- Reserve 1 cup of pasta water, then drain the pasta in a colander without rinsing.
- In the same skillet, melt butter over medium heat.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Slowly pour in heavy cream, stirring continuously, and let it simmer for 3-4 minutes.
- Gradually whisk in grated Parmesan cheese until melted and smooth. Adjust consistency with reserved pasta water if needed.
- Stir in Italian seasoning and season with additional salt and pepper to taste.
- Add cooked fettuccine to the skillet with the Alfredo sauce and toss to coat.
- Gently mix in the sliced chicken. Add more reserved pasta water if the sauce is too thick.
- Heat through for another 2-3 minutes.
- Remove from heat and serve immediately, garnished with chopped parsley.
- Optionally, sprinkle additional Parmesan cheese on top before serving.
- Enjoy with garlic bread or a fresh salad!
Notes
- For added flavor, marinate the chicken in Italian herbs or lemon juice before cooking.
- Substitute half-and-half for a lighter version, but the sauce may be less rich.
- Add vegetables like broccoli or spinach for extra nutrition.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or cream to loosen the sauce.
