Enjoy a comforting Chicken Alfredo featuring tender chicken and fettuccine pasta in a rich, homemade Alfredo sauce. This creamy dish is perfect for weeknight dinners or special occasions, guaranteed to impress your family and friends!

Ingredients

Scale
  • 1 pound of boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 8 ounces fettuccine pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts.
  3. Cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C).
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into strips or bite-sized pieces.
  5. Bring salted water to a boil in a large pot.
  6. Add fettuccine pasta and cook according to package instructions (8-10 minutes) until al dente. Stir occasionally.
  7. Reserve 1 cup of pasta water, then drain the pasta in a colander without rinsing.
  8. In the same skillet, melt butter over medium heat.
  9. Add minced garlic and sauté for 1-2 minutes until fragrant.
  10. Slowly pour in heavy cream, stirring continuously, and let it simmer for 3-4 minutes.
  11. Gradually whisk in grated Parmesan cheese until melted and smooth. Adjust consistency with reserved pasta water if needed.
  12. Stir in Italian seasoning and season with additional salt and pepper to taste.
  13. Add cooked fettuccine to the skillet with the Alfredo sauce and toss to coat.
  14. Gently mix in the sliced chicken. Add more reserved pasta water if the sauce is too thick.
  15. Heat through for another 2-3 minutes.
  16. Remove from heat and serve immediately, garnished with chopped parsley.
  17. Optionally, sprinkle additional Parmesan cheese on top before serving.
  18. Enjoy with garlic bread or a fresh salad!

Notes

  • For added flavor, marinate the chicken in Italian herbs or lemon juice before cooking.
  • Substitute half-and-half for a lighter version, but the sauce may be less rich.
  • Add vegetables like broccoli or spinach for extra nutrition.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or cream to loosen the sauce.
