Description

Creamy, refreshing Coconut Lime Drink! This tropical treat is made with coconut cream, fresh lime juice, and a touch of sweetness. Perfect as a mocktail or with a splash of rum!


Ingredients

  • 1 can (13.5 oz) full-fat coconut milk, refrigerated overnight
  • 1/2 cup fresh lime juice (from about 46 limes)
  • 1/4 cup simple syrup (see instructions below, or use agave nectar or honey to taste)
  • 1/4 cup water (adjust to desired consistency)
  • Lime wedges, for garnish
  • Ice cubes
  • Optional: 2 tablespoons white rum or coconut rum (for an adult version)
  • Optional: Fresh mint sprigs, for garnish
  • 1/2 cup granulated sugar
  • 1/2 cup water

Instructions

  1. In a small saucepan, combine the sugar and water.
  2. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. This usually takes about 3-5 minutes.
  3. Remove from heat and let cool completely. You can store the simple syrup in an airtight container in the refrigerator for up to a month.
  4. This is a crucial step! Because we’re using full-fat coconut milk that has been refrigerated overnight, the cream will have separated from the watery liquid. Carefully open the can of coconut milk, being careful not to shake it.
  5. Scoop out the thick, solidified coconut cream from the top of the can. Try to leave the watery liquid behind. You should get about 1 cup of coconut cream. Place the coconut cream in a blender.
  6. If you accidentally get some of the watery liquid in with the cream, don’t worry too much. Just try to minimize it. The watery liquid can be reserved for smoothies or other recipes.
  7. Add the fresh lime juice, simple syrup (or agave/honey), and water to the blender with the coconut cream.
  8. If you’re making an adult version, add the rum now.
  9. Blend on high speed until completely smooth and creamy. This should take about 30-60 seconds. Make sure there are no lumps of coconut cream remaining.
  10. Taste and adjust the sweetness and tartness as needed. If it’s too tart, add more simple syrup (or agave/honey). If it’s too sweet, add a little more lime juice. If it’s too thick, add a little more water.
  11. Fill glasses with ice cubes.
  12. Pour the coconut lime drink over the ice.
  13. Garnish with lime wedges and fresh mint sprigs (if using).
  14. Serve immediately and enjoy! This drink is best served cold.

Notes

  • Use Fresh Limes: Freshly squeezed lime juice makes a huge difference in the flavor of this drink. Bottled lime juice just doesn’t compare.
  • Adjust Sweetness: The amount of simple syrup you need will depend on the tartness of your limes and your personal preference. Start with 1/4 cup and add more to taste. You can also use agave nectar or honey instead of simple syrup.
  • Make it Creamier: For an even creamier drink, you can add a tablespoon or two of coconut cream (the solidified part from the can of coconut milk) directly to each glass before pouring in the drink.
  • Add a Spicy Kick: For a spicy twist, add a pinch of cayenne pepper or a small piece of jalapeño (seeds removed) to the blender.
  • Make it a Mocktail: Omit the rum for a refreshing non-alcoholic version.
  • Make it Ahead: You can prepare the coconut lime drink ahead of time and store it in the refrigerator for up to 24 hours. Just be sure to stir it well before serving, as it may separate slightly.
  • Frozen Coconut Lime Drink: For a frozen version, blend all the ingredients with 1-2 cups of ice until smooth.
  • Coconut Water Variation: Substitute half of the water with coconut water for a lighter, more coconutty flavor.
