- 1/2 cup fresh strawberries, hulled and sliced
- 1/4 cup dark chocolate chips (optional)
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium-sized mixing bowl, combine the almond milk, chia seeds, cocoa powder, maple syrup, and vanilla extract. Whisk until well mixed and there are no clumps of cocoa powder.
- Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and expand.
- After 5 minutes, stir the mixture again to prevent the chia seeds from clumping together.
- Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 2 hours, or preferably overnight.
- Rinse the strawberries under cold water and gently pat them dry with a paper towel.
- Hull the strawberries by removing the green tops and slice them into thin pieces.
- For added sweetness, sprinkle a little sugar or drizzle honey over the sliced strawberries and let them sit for about 10-15 minutes to create a syrup.
- Remove the chia pudding from the refrigerator; it should have thickened to a pudding-like consistency.
- In serving glasses or bowls, add a layer of chocolate chia pudding at the bottom, filling it about halfway.
- Add a layer of sliced strawberries on top of the pudding.
- If using, sprinkle dark chocolate chips on top of the strawberries.
- Repeat the layers until you reach the top of your serving glasses, typically two layers of pudding and two layers of strawberries.
- Finish with more strawberry slices, a sprinkle of chocolate chips, and fresh mint leaves for garnish.
