  • 1/4 cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup (or honey, if not vegan)
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, hulled and sliced
  • 1/4 cup dark chocolate chips (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, cocoa powder, maple syrup, and vanilla extract. Whisk until well mixed and there are no clumps of cocoa powder.
  2. Let the mixture sit for about 5 minutes to allow the chia seeds to absorb the liquid and expand.
  3. After 5 minutes, stir the mixture again to prevent the chia seeds from clumping together.
  4. Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 2 hours, or preferably overnight.
  5. Rinse the strawberries under cold water and gently pat them dry with a paper towel.
  6. Hull the strawberries by removing the green tops and slice them into thin pieces.
  7. For added sweetness, sprinkle a little sugar or drizzle honey over the sliced strawberries and let them sit for about 10-15 minutes to create a syrup.
  8. Remove the chia pudding from the refrigerator; it should have thickened to a pudding-like consistency.
  9. In serving glasses or bowls, add a layer of chocolate chia pudding at the bottom, filling it about halfway.
  10. Add a layer of sliced strawberries on top of the pudding.
  11. If using, sprinkle dark chocolate chips on top of the strawberries.
  12. Repeat the layers until you reach the top of your serving glasses, typically two layers of pudding and two layers of strawberries.
  13. Finish with more strawberry slices, a sprinkle of chocolate chips, and fresh mint leaves for garnish.
