  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup chocolate chips (optional)
  • 1 cup unsalted butter, softened
  • 3 ½ cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract until frothy.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Gradually stir in the boiling water until the batter is smooth and thin. If desired, fold in the chocolate chips.
  6. Line a standard 12-cup muffin tin with cupcake liners and fill each liner about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. In a large mixing bowl, beat the softened butter with a hand mixer or stand mixer until creamy.
  9. Gradually add the powdered sugar and cocoa powder, mixing until combined.
  10. Add the vanilla extract and heavy cream (or milk) and beat until the frosting is light and fluffy.
  11. Once the cupcakes are completely cool, frost them with the chocolate frosting using a spatula or piping bag.

Notes

  • For a lighter frosting, you can substitute heavy cream with milk.
