- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup chocolate chips (optional)
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- ¼ cup heavy cream (or milk)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- In a separate bowl, whisk together the wet ingredients: eggs, milk, vegetable oil, and vanilla extract until frothy.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Gradually stir in the boiling water until the batter is smooth and thin. If desired, fold in the chocolate chips.
- Line a standard 12-cup muffin tin with cupcake liners and fill each liner about two-thirds full with batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- In a large mixing bowl, beat the softened butter with a hand mixer or stand mixer until creamy.
- Gradually add the powdered sugar and cocoa powder, mixing until combined.
- Add the vanilla extract and heavy cream (or milk) and beat until the frosting is light and fluffy.
- Once the cupcakes are completely cool, frost them with the chocolate frosting using a spatula or piping bag.
Notes
- For a lighter frosting, you can substitute heavy cream with milk.
- Feel free to add sprinkles or other toppings for decoration!
