  • 2 cloves garlic, minced

  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 9 ounces refrigerated cheese tortellini
  • 5 ounces fresh spinach, roughly chopped
  • 1/4 cup heavy cream (optional, for extra richness)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the bite-sized chicken pieces to the pot and cook until browned on all sides and cooked through (5-7 minutes). Remove the chicken from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Add the minced garlic to the pot and cook for about 1 minute, or until fragrant.
  5. Pour the chicken broth into the pot, scraping up any browned bits from the bottom.
  6. Add the undrained diced tomatoes, Italian seasoning, salt, and pepper to the pot. Stir well to combine.
  7. Bring the soup to a simmer, then reduce the heat to low and cover. Let it simmer for about 15 minutes.
  8. Add the cooked chicken back to the pot. Stir to combine.
  9. Add the cheese tortellini to the soup. Cook according to the package directions (usually about 3-5 minutes), or until the tortellini are tender.
  10. Stir in the fresh spinach until it wilts, about 1-2 minutes.
  11. If desired, stir in the heavy cream for extra richness.
  12. Taste and adjust the seasoning as needed.
  13. Serve hot, garnished with grated Parmesan cheese, if desired.
