  • 2 tablespoons butter

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup breadcrumbs (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes to about 1/8 inch thick.
  3. If not already cooked, poach, roast, or grill the chicken, then shred or dice it.
  4. Finely chop the onion and mince the garlic.
  5. In a large skillet, melt the butter over medium heat. Add the onion and sauté for about 5 minutes until translucent. Add the garlic and cook for an additional minute.
  6. In a mixing bowl, whisk together the heavy cream and milk until well blended.
  7. Add thyme, salt, black pepper, and nutmeg (if using) to the cream mixture and whisk to combine.
  8. In a greased 9×13 inch baking dish, layer sliced potatoes, shredded chicken, and cheese. Repeat until all ingredients are used, finishing with a layer of potatoes.
  9. Pour the cream mixture evenly over the layered ingredients, ensuring all potatoes are covered.
  10. Sprinkle remaining cheese on top and add breadcrumbs if desired.
  11. Cover with aluminum foil and bake for 45 minutes.
  12. Remove foil and bake for an additional 15-20 minutes until the top is golden brown and bubbly.
  13. Insert a knife into the center; it should slide in easily. If not, return to the oven for another 10 minutes.
