  • 2 cups of cooked rice (white or brown)
  • 1 pound of boneless, skinless chicken breasts
  • 1 cup of corn (fresh, frozen, or canned)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper (any color), diced
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 tablespoon of soy sauce (optional)
  • Fresh cilantro or parsley for garnish
  • Avocado slices (optional)
  • Lime wedges (optional)

Instructions

  1. Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, paprika, and cumin.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove from skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper for 3-4 minutes until softened. Add minced garlic and cook for an additional 1-2 minutes.
  4. If using fresh corn, add it now. If using frozen or canned corn, wait until the next step. Pour in the chicken broth and bring to a simmer. Add soy sauce if desired.
  5. If using frozen corn, add it now and let everything simmer for about 5 minutes.
  6. Return the cooked chicken to the skillet and stir to combine. Adjust seasoning with salt, pepper, or spices as needed. Cook for an additional 2-3 minutes.
  7. Place a scoop of cooked rice in each bowl. Top with the chicken and vegetable mixture, including some broth. Add avocado slices and garnish with cilantro or parsley. Serve with lime wedges.

  • Leftovers can be stored in airtight containers in the fridge for up to 3 days. Reheat before serving.
