Savor the flavors of homemade Chicken Chow Mein, featuring tender chicken, colorful vegetables, and chow mein noodles tossed in a savory sauce. This quick stir-fry is perfect for a delicious weeknight dinner!

Ingredients

Scale
  • 8 oz. chow mein noodles
  • 2 tablespoons vegetable oil
  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced (red and green for color)
  • 1 cup carrots, julienned
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of water. Add chow mein noodles and cook according to package instructions (3-5 minutes) until al dente. Drain and rinse under cold water. Set aside.
  2. In a medium bowl, combine sliced chicken with 1 tablespoon soy sauce, a pinch of salt, and pepper. Mix well and let marinate for 15-20 minutes.
  3. Wash and chop broccoli into small florets, slice bell peppers into thin strips, and julienne carrots. Chop green onions, separating the white parts from the green tops.
  4. Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Add marinated chicken and stir-fry for 5-7 minutes until cooked through. Remove chicken and set aside.
  5. In the same pan, add remaining tablespoon of oil, minced garlic, and white parts of green onions. Stir-fry for 30 seconds until fragrant. Add broccoli, bell peppers, and carrots; stir-fry for 3-4 minutes until tender-crisp. Add bean sprouts and stir-fry for an additional 1-2 minutes.
  6. Return cooked chicken to the pan with vegetables. In a small bowl, mix remaining 3 tablespoons soy sauce, oyster sauce, cornstarch, and chicken broth until cornstarch is dissolved. Pour sauce over chicken and vegetables, stirring to coat. Cook for 2-3 minutes until sauce thickens.
  7. Add cooked chow mein noodles to the pan, gently tossing to combine. If too dry, add a splash of chicken broth or soy sauce.
  8. Taste and adjust seasoning with more soy sauce, salt, or pepper if needed. Remove from heat.
  9. Serve hot, garnished with green tops of chopped green onions and optional sesame seeds. Enjoy with chopsticks or a fork, and pair with soy sauce or chili sauce if desired.

Notes

  • Feel free to customize the vegetables based on your preference or what you have on hand.
  • For a vegetarian version, substitute chicken with tofu or additional vegetables.
