  • 1/2 teaspoon black pepper

  • 1/2 cup buttermilk (or regular milk with a splash of vinegar)
  • Vegetable oil for frying
  • Your favorite dipping sauce (ranch, honey mustard, or BBQ sauce)

Instructions

  1. Prepare the Chicken: Wash the chicken breasts under cold water and pat them dry with paper towels. Cut the chicken into bite-sized pieces (1 to 1.5 inches).
  2. Marinate: In a medium bowl, pour in the buttermilk. Add the chicken pieces, ensuring they are fully submerged. Let marinate for at least 30 minutes.
  3. Prepare the Coating: In a shallow dish, combine flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. In another dish, whisk the eggs. In a third dish, add the breadcrumbs.
  4. Bread the Chicken: Remove chicken from buttermilk, allowing excess to drip off. Dip each piece into the flour mixture, then the eggs, and finally roll in the breadcrumbs, pressing gently to adhere.
  5. Cook the Chicken Bites: In a large skillet, heat enough vegetable oil to cover the bottom by about 1/4 inch over medium-high heat. Test the oil with a small piece of bread; if it sizzles, it’s ready. Fry the chicken bites in batches for 3-4 minutes on each side until golden brown and cooked through. Use a slotted spoon to remove and place on paper towels.
  6. Serve: Arrange the cooked chicken bites on a platter. Garnish with fresh parsley or a sprinkle of paprika if desired. Serve warm with your favorite dipping sauces.

  • For extra crispy chicken bites, consider double-dipping: after the first round of breading, dip the chicken back into the egg and then again into the breadcrumbs.
