- 2 large eggs

- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional for heat)
- 1/2 cup buttermilk (or regular milk with a splash of vinegar)
- Vegetable oil for frying
- Your favorite dipping sauce (ranch, honey mustard, or BBQ sauce)
Instructions
- Prepare the Chicken: Wash the chicken breasts under cold water and pat them dry with paper towels. Cut the chicken into bite-sized pieces (1 to 1.5 inches).
- Marinate: In a medium bowl, pour in the buttermilk. Add the chicken pieces, ensuring they are fully submerged. Let marinate for at least 30 minutes.
- Prepare the Coating: In a shallow dish, combine flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. In another dish, whisk the eggs. In a third dish, add the breadcrumbs.
- Bread the Chicken: Remove chicken from buttermilk, allowing excess to drip off. Dip each piece into the flour mixture, then the eggs, and finally roll in the breadcrumbs, pressing gently to adhere.
- Cook the Chicken Bites: In a large skillet, heat enough vegetable oil to cover the bottom by about 1/4 inch over medium-high heat. Test the oil with a small piece of bread; if it sizzles, its ready. Fry the chicken bites in batches for 3-4 minutes on each side until golden brown and cooked through. Use a slotted spoon to remove and place on paper towels.
- Serve: Arrange the cooked chicken bites on a platter. Garnish with fresh parsley or a sprinkle of paprika if desired. Serve warm with your favorite dipping sauces.
Notes
- For extra crispy chicken bites, consider double-dipping: after the first round of breading, dip the chicken back into the egg and then again into the breadcrumbs.
- If you prefer baking, preheat your oven to 400°F (200°C), place the breaded chicken on a parchment-lined baking sheet, and spray lightly with cooking spray.
