Ingredients

Scale
  • 2 cups strong brewed coffee, cooled
  • 2 cups milk (whole, 2%, skim, almond, or oat)
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup heavy cream (optional)
  • 2 teaspoons vanilla extract
  • 3 cups ice (more or less, depending on desired consistency)
  • 1/4 teaspoon xanthan gum
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream, warmed
  • 4 tablespoons unsalted butter, cut into pieces
  • 1/2 teaspoon sea salt
  • 1/4 cup homemade caramel sauce (or store-bought)
  • 1/2 cup granulated sugar
  • 2 tablespoons water
  • 1/4 teaspoon baking soda
  • Pinch of sea salt
  • Whipped cream
  • Extra caramel drizzle
  • Extra caramel crunch topping

Instructions

  1. Make the Caramel Sauce: In a medium saucepan, combine sugar and water. Cook over medium heat without stirring until a deep amber color. Remove from heat, carefully add warmed heavy cream and butter. Stir until smooth. Stir in salt. Cool completely and store in an airtight container in the refrigerator.
  2. Make the Caramel Crunch Topping: In a medium saucepan, combine sugar and water. Cook over medium heat without stirring until a deep amber color. Remove from heat, immediately add baking soda and salt. Stir vigorously. Pour onto a parchment-lined baking sheet and spread into a thin layer. Cool completely and break into pieces. Store in an airtight container at room temperature.
  3. Prepare the Frappuccino Base: In a blender, combine cooled coffee, milk, sugar, heavy cream (if using), vanilla extract, ice, and xanthan gum. Blend until smooth and creamy. Adjust sweetness or vanilla to taste.
  4. Assemble the Frappuccino: Drizzle caramel sauce inside the serving glass. Pour in the Frappuccino. Top with whipped cream, caramel drizzle, and caramel crunch topping. Serve immediately.

Notes

  • Coffee Strength: Adjust the coffee roast to your preference.
  • Sweetness: Adjust the amount of sugar to your preference.
  • Non-Dairy: Use almond, oat, or soy milk for a dairy-free version.
  • Extra Caramel: Add caramel syrup to the Frappuccino base.
  • Chocolate Variation: Add chocolate syrup or cocoa powder for a mocha version.
  • Spiced Caramel: Add cinnamon or nutmeg to the caramel sauce.
  • Boozy: Add caramel vodka or coffee liqueur for an adult version.
  • Freezing: Freeze leftover Frappuccino in ice cube trays and blend with milk when ready to serve.
  • Whipped Cream Alternatives: Use vanilla ice cream or non-dairy whipped topping.
  • Caramel Sauce Shortcuts: Use high-quality store-bought caramel sauce.
  • Caramel Crunch Alternatives: Use crushed toffee bits or caramel popcorn.
  • Frappuccino is too icy: Add a little more milk and blend again.
  • Frappuccino is too thin: Add a few more ice cubes and blend again.
  • Caramel sauce is too thick: Gently warm it in the microwave or on the stovetop.
  • Caramel crunch is too sticky: Make sure you spread it out in a thin layer on the parchment paper and let it cool completely. If it’s still sticky, you can try adding a little more baking soda next time.
