  • 1 cup milk (whole or 2% for creaminess)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar (optional, for sweetness)
  • Butter or oil for cooking
  • Maple syrup, for serving
  • Powdered sugar, for garnish (optional)

Instructions

  1. In a medium bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
  2. Add half of the fresh blueberries and gently mash them with a fork to release juices and flavor.
  3. If desired, sprinkle in a tablespoon of sugar for sweetness. Mix until well combined and set aside.
  4. In a large mixing bowl, crack the four eggs and whisk until fully beaten.
  5. Pour in the cup of milk and add the teaspoon of vanilla extract.
  6. Sprinkle in the teaspoon of ground cinnamon and whisk until smooth and well combined.
  7. Take a slice of thick-cut bread and spread a generous amount of the cream cheese filling on one side.
  8. Place another slice of bread on top to create a sandwich. Repeat for all slices, using up all the cream cheese filling.
  9. Dip each sandwich into the egg mixture, soaking for a few seconds on each side.
  10. In a large skillet or griddle, heat a tablespoon of butter or oil over medium heat.
  11. Carefully place the soaked sandwiches onto the skillet, cooking in batches if necessary.
  12. Cook each sandwich for about 3-4 minutes on one side until golden brown.
  13. Flip the sandwiches and cook for another 3-4 minutes on the other side until crispy and golden.
