Ingredients

Scale
  • 2 oz gin (preferably London dry gin)
  • 3/4 oz fresh lemon juice (about half a lemon)
  • 1/2 oz honey syrup (made from equal parts honey and warm water)
  • Ice cubes
  • Fresh lemon twist or a sprig of thyme for garnish (optional)

Instructions

  1. Measure equal parts of honey and warm water (e.g., 1/2 cup each).
  2. In a small bowl or jar, combine honey and warm water.
  3. Stir until the honey is fully dissolved (about 1-2 minutes).
  4. Let it cool to room temperature. Store any leftover syrup in the refrigerator for up to a month.
  5. Roll fresh lemons on the countertop with your palm to release juices.
  6. Cut lemons in half and use a citrus juicer or fork to extract juice (aim for 3/4 oz).
  7. Strain the juice through a fine mesh sieve to remove seeds and pulp.
  8. Fill a cocktail shaker halfway with ice cubes.
  9. Pour in 2 oz of gin, followed by 3/4 oz of fresh lemon juice and 1/2 oz of honey syrup.
  10. Secure the lid and shake vigorously for 15-20 seconds to chill and combine.
  11. Take a chilled cocktail glass and place a fine mesh strainer over it.
  12. Pour the cocktail mixture through the strainer into the glass.
  13. Garnish with a fresh lemon twist or a sprig of thyme, if desired.
  14. Admire the golden hue and delightful aroma of your cocktail.
  15. Sip slowly to enjoy the balance of flavors.
  16. For serving guests, prepare honey syrup ahead of time for quick cocktail making.
