Instructions

  1. Combine the dry ingredients: In a medium-sized bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. Make sure everything is evenly distributed.
  2. Incorporate the wet ingredients: In a separate bowl, whisk together the egg, milk, and vanilla extract. Whisk until the egg is fully incorporated and the mixture is smooth.
  3. Combine wet and dry: Gradually pour the wet ingredients into the dry ingredients, whisking constantly until just combined. Be careful not to overmix! A few lumps are perfectly fine.
  4. Let the batter rest: Cover the bowl with plastic wrap and let the batter rest for about 15-20 minutes.
