- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1 tablespoon Dijon mustard
- 1 tablespoon brown sugar (optional, for a sweet glaze)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the pork loin dry with paper towels to help the seasoning stick.
- Trim any excess fat from the pork loin, leaving some for flavor.
- In a small bowl, mix garlic powder, onion powder, smoked paprika, black pepper, salt, rosemary, and thyme to create a dry rub.
- Rub olive oil all over the pork loin to help the dry rub adhere.
- Generously sprinkle the dry rub mixture over the pork loin, covering all sides.
- Lay the bacon slices out on a clean surface, slightly overlapping them.
- Starting at one end, place the first slice of bacon over the pork loin, tucking it underneath. Continue wrapping, overlapping each slice.
- Secure the ends of the bacon with toothpicks if needed.
- Place the bacon-wrapped pork loin in a roasting pan or on a baking sheet lined with aluminum foil.
- For a sweet glaze, mix Dijon mustard and brown sugar, then brush it over the top of the pork loin.
- Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 145°F (63°C).
- Baste the pork loin with drippings halfway through cooking for added flavor.
- Once cooked, remove from the oven and let it rest for 10-15 minutes.
