Ingredients

Scale
  • 12 large jalapeño peppers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (about 68 slices)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup breadcrumbs (optional, for topping)
  • 1 tbsp olive oil (if using breadcrumbs)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each jalapeño in half lengthwise and scoop out the seeds and membranes.
  3. Place the halved jalapeños on a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine cream cheese, cheddar cheese, crumbled bacon, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until well combined.
  5. Generously fill each jalapeño half with the cheese and bacon mixture.
  6. (Optional) In a small bowl, mix breadcrumbs with olive oil until evenly coated. Sprinkle over the stuffed jalapeños.
  7. Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the cheese is bubbly and golden brown.
  8. Remove from the oven and let cool for a few minutes before serving. Enjoy with ranch dressing or a spicy dipping sauce.

Notes

  • For a spicier kick, consider adding diced jalapeño seeds or hot sauce to the filling.
  • You can substitute turkey bacon for a healthier option or skip the bacon for a vegetarian version.
  • These poppers can also be grilled for a different flavor profile.
