  • 200g fresh Chinese wheat noodles
  • 200g ground pork
  • 2 tablespoons vegetable oil
  • 2 tablespoons Sichuan peppercorns
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tablespoons doubanjiang
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame paste
  • 1 tablespoon chili oil
  • 1 tablespoon sugar
  • 2 green onions, finely chopped
  • 1/4 cup roasted peanuts, crushed
  • Fresh cilantro, chopped
  • Water

Instructions

  1. Bring a large pot of water to a rolling boil.
  2. Add the fresh Chinese wheat noodles and cook according to package instructions (3-5 minutes for fresh noodles).
  3. Drain the noodles in a colander and rinse under cold water to stop the cooking process.
  4. Toss the noodles with a little vegetable oil to prevent sticking and set aside.
  5. In a dry skillet over medium heat, toast the Sichuan peppercorns for 2-3 minutes until fragrant. Remove from heat and let cool.
  6. Grind the toasted peppercorns into a fine powder using a spice grinder or mortar and pestle.
  7. In a large skillet or wok, heat vegetable oil over medium-high heat. Add ground pork and cook until browned and crispy (5-7 minutes).
  8. Stir in minced garlic and ginger, cooking for 1-2 minutes until fragrant.
  9. Add doubanjiang and stir well, cooking for another 2 minutes.
  10. Pour in soy sauce, rice vinegar, sesame paste, chili oil, and sugar. Stir to combine and let simmer for 3-5 minutes, adding water if needed for desired consistency.
  11. In a large mixing bowl, add cooked noodles and pour the sauce over them. Toss gently to coat.
  12. Adjust seasoning with more chili oil or rice vinegar if desired.
  13. Divide the sauced noodles into serving bowls.
  14. Top with chopped green onions, crushed peanuts, and fresh cilantro.
  15. Enjoy the dish hot for the best flavor.
