Instructions

  1. Preheat: Preheat oven to 375°F (190°C). Prepare a 12-cup muffin tin with cooking spray or paper liners.
  2. Dry Ingredients: In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt for at least 30 seconds.
  3. Wet Ingredients: In a medium bowl, combine applesauce, granulated sugar, brown sugar, vegetable oil, egg, and vanilla extract. Whisk until well combined.
  4. Combine: Pour the wet ingredients into the bowl with the dry ingredients. Gently fold together using a rubber spatula or wooden spoon until just moistened. Do not overmix.
  5. Nuts (Optional): If using, gently fold in the chopped walnuts or pecans.
  6. Fill: Fill each muffin cup about 2/3 full.
