- 4 boneless, skinless chicken breasts
- 1 cup of sliced mushrooms
- 1 cup of cooked bacon, chopped
- 1 cup of shredded Monterey Jack cheese
- 1 cup of shredded cheddar cheese
- 1/2 cup of honey mustard dressing
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of paprika
- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
- In a small bowl, mix garlic powder, onion powder, paprika, salt, and pepper. Rub this mixture over the chicken breasts.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- In a separate pan, cook the chopped bacon over medium heat until crispy. Drain on paper towels.
- In the same pan used for the bacon, sauté the sliced mushrooms for 5-7 minutes until tender. Season with salt and pepper.
- Remove the skillet from heat. Drizzle honey mustard dressing over the chicken, then layer with sautéed mushrooms and crispy bacon.
- Sprinkle shredded Monterey Jack and cheddar cheese over the chicken.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly.
- Use a meat thermometer to ensure the chicken is fully cooked. If not, return to the oven for an additional 5 minutes.
- Let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
