Instructions

  1. Preheat your air fryer to 250°F (120°C). If your air fryer has a baking function, use that setting.
  2. In a clean, dry mixing bowl, add the egg whites. Ensure there are no traces of yolk.
  3. Using an electric mixer, beat the egg whites on medium speed until soft peaks form (about 2-3 minutes).
  4. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat. Increase the speed to high and beat until glossy and stiff peaks form (about 5-7 minutes).
  5. Gently fold in the white vinegar, cornstarch, and vanilla extract using a spatula, being careful not to deflate the meringue.
  6. Line the air fryer basket with parchment paper.
  7. Spoon the meringue mixture onto the parchment paper, shaping it into a circle about 8 inches in diameter with a slight well in the center.
  8. Create swirls or peaks on the surface of the meringue for decoration.
  9. Carefully place the parchment paper with the meringue into the preheated air fryer basket.
  10. Cook at 250°F (120°C) for about 60-70 minutes, until dry and crisp on the outside and soft inside.
  11. After cooking, turn off the air fryer and let the meringue cool inside with the door slightly ajar.
  12. In a mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract.
  13. Beat the cream on medium speed until soft peaks form, being careful not to overwhip.
