- Preheat your air fryer to 250°F (120°C). If your air fryer has a baking function, use that setting.
- In a clean, dry mixing bowl, add the egg whites. Ensure there are no traces of yolk.
- Using an electric mixer, beat the egg whites on medium speed until soft peaks form (about 2-3 minutes).
- Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat. Increase the speed to high and beat until glossy and stiff peaks form (about 5-7 minutes).
- Gently fold in the white vinegar, cornstarch, and vanilla extract using a spatula, being careful not to deflate the meringue.
- Line the air fryer basket with parchment paper.
- Spoon the meringue mixture onto the parchment paper, shaping it into a circle about 8 inches in diameter with a slight well in the center.
- Create swirls or peaks on the surface of the meringue for decoration.
- Carefully place the parchment paper with the meringue into the preheated air fryer basket.
- Cook at 250°F (120°C) for about 60-70 minutes, until dry and crisp on the outside and soft inside.
- After cooking, turn off the air fryer and let the meringue cool inside with the door slightly ajar.
- In a mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract.
- Beat the cream on medium speed until soft peaks form, being careful not to overwhip.
- Set the whipped cream aside in the refrigerator until ready to assemble.
- Once the meringue has cooled, carefully remove it from the air fryer and peel off the parchment paper.
- Place the meringue on a serving platter or cake stand.
- Spread the whipped cream evenly over the top of the meringue, filling the well you created earlier.
- Top with fresh fruits and garnish with mint leaves if desired.
