  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro

Instructions

  1. In a large mixing bowl, combine the sliced chicken, red bell pepper, green bell pepper, and onion. Ensure everything is evenly distributed.
  2. In a separate small bowl, whisk together the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Pour the spice mixture over the chicken and vegetables. Toss everything together until well coated.
  4. If time allows, let the mixture marinate for 15-30 minutes to enhance the flavors. If in a hurry, you can skip this step.
  5. Preheat your air fryer to 400°F (200°C).
  6. Place the chicken and vegetable mixture in the air fryer basket in a single layer. Cook in batches if necessary.
  7. Cook for 10-12 minutes, shaking the basket halfway through. Check for doneness at the 10-minute mark; the chicken should be cooked through and the veggies tender yet slightly crisp.
  8. Remove the basket and let it sit for a couple of minutes to allow juices to redistribute.
  9. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or microwave them wrapped in a damp paper towel for about 20 seconds.
  10. Take a warm tortilla and add a generous scoop of the chicken and vegetable mixture in the center.
  11. Add your favorite toppings such as sour cream, guacamole, and fresh cilantro.
  12. Fold the sides of the tortilla over the filling and roll it up tightly.
