- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced

- 2 teaspoons chili powder

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 8 small flour or corn tortillas
- Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro
Instructions
- In a large mixing bowl, combine the sliced chicken, red bell pepper, green bell pepper, and onion. Ensure everything is evenly distributed.
- In a separate small bowl, whisk together the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Pour the spice mixture over the chicken and vegetables. Toss everything together until well coated.
- If time allows, let the mixture marinate for 15-30 minutes to enhance the flavors. If in a hurry, you can skip this step.
- Preheat your air fryer to 400°F (200°C).
- Place the chicken and vegetable mixture in the air fryer basket in a single layer. Cook in batches if necessary.
- Cook for 10-12 minutes, shaking the basket halfway through. Check for doneness at the 10-minute mark; the chicken should be cooked through and the veggies tender yet slightly crisp.
- Remove the basket and let it sit for a couple of minutes to allow juices to redistribute.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or microwave them wrapped in a damp paper towel for about 20 seconds.
- Take a warm tortilla and add a generous scoop of the chicken and vegetable mixture in the center.
- Add your favorite toppings such as sour cream, guacamole, and fresh cilantro.
- Fold the sides of the tortilla over the filling and roll it up tightly.
