    • 4 ounces Monterey Jack cheese, shredded
    • 4 ounces jarred pimentos, drained and chopped
    • 1/2 cup mayonnaise
    • 2 tablespoons cream cheese, softened
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon hot sauce (such as Tabasco), or more to taste
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon cayenne pepper, or more to taste
    • Salt and freshly ground black pepper to taste
  • For the Fried Green Tomatoes:
    • 3-4 green tomatoes, sliced into 1/4-inch thick rounds
    • 1 cup all-purpose flour
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 2 large eggs, beaten
    • 1 cup yellow cornmeal
    • Vegetable oil, for frying
  • For the Pickled Okra (Optional):
    • 1 pound fresh okra pods, trimmed
    • 1 cup white vinegar
    • 1 cup water
    • 1/4 cup sugar
    • 2 tablespoons kosher salt
    • 2 cloves garlic, smashed
    • 1 teaspoon mustard seeds
    • 1/2 teaspoon red pepper flakes
  • Garnish:
    • Fresh chives, chopped (optional)

Making the Spicy Pimento Cheese:

Frying the Green Tomatoes:

  1. Prepare your dredging station: In a shallow dish, combine the flour, salt, pepper, garlic powder, and onion powder. In another shallow dish, beat the eggs. In a third shallow dish, place the cornmeal.

  3. Dip the floured tomato slice into the beaten eggs, again coating both sides. Let any excess egg drip off.
  4. Finally, dredge the tomato slice in the cornmeal, pressing gently to ensure the cornmeal adheres.
  5. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. The oil is ready when a small piece of bread dropped into the oil sizzles immediately.
  6. Carefully place the breaded tomato slices into the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove the fried green tomatoes from the skillet and place them on a wire rack lined with paper towels to drain excess oil.
  8. Season immediately with a pinch of salt.

Pickling the Okra (Optional):

  6. Remove any air bubbles by gently tapping the jar on the counter.
  7. Seal the jar tightly and let it cool completely.
  8. Refrigerate for at least 24 hours before serving. The pickled okra will keep in the refrigerator for up to 2 weeks.
